I’m always reading that it’s fine to eat some chocolate as long as it’s in moderation. Researcher’s even say that chocolate is good for you (I totally agree with that story by the way. 100 percent).
So with this in mind, I give you the best afternoon snack ever – mini chocolate cupcakes.
The only problem is, they are a little tricky to stop eating after one.
The best thing to do is make a little batch and then take them to work to share with your colleagues. They’re happy, you’re happy and everyone won’t have to work so hard at the gym when they get home!
My absolute favourite part of this recipe is that you can just throw it all into one bowl and mix it together. Love a one bowl treat!
Mini cupcake molds
Mini cupcake liners
+ all of the ingredients above.
Step 1: Preheat your oven to 180∘ C and pop your mini cupcake liners in your mini cupcakes tray.
Step 2: Beat all of the ingredients in your mixing bowl on a low speed until combined. Then mix on high speed for a few minutes until the mixture is pale in colour.
Step 3: Dollop a small tablespoon of mixture into each patty cake. Bake for approximately 15 minutes (it’s best to check their progress after 10 minutes with your skewer).
Step 4: Once cool to touch, remove your cupcakes from the cupcake tin and rest to cool on a wire cooling rack.

These are quick and easy to whip up when your friends ring to say they’re popping over.
